Cheera Thoran (Greenleaves Stir Fry)
Green leaves has got many health benefits and could be consumed daily. Here comes a simple recipe made out of green leaves.Ingredients:
Green leaves - 1 cup
Mustard seeds - 1/4 teaspoon
Shallots - 8 (or) medium sized onion - 1
Green chilli - 2 (as per requirement)
Turmeric powder - 1/4 teaspoon
Salt - to taste
Finely grated coconut - 4 tablespoon
Oil (preferably coconut oil)Method of preparation :
Step 1: Wash the green leaves thoroughly in cold water and let the water drain off. Now finely chop the green leaves and add salt and turmeric powder to it. Mix it up well and keep it aside.
Step 2: Heat oil in a pan and add mustard seeds as the oil gets heated.
Step 3: Once the mustard seeds splutter, add finely chopped shallots and sliced green chillies to it and saute well.
Step 4: Add the chopped green leaves into it
when the shallots turns translucent. Saute it well for a while and add the grated coconut to it. Then cover the pan with a lid and let it get cooked for 5 - 10 minutes.
The delicious green leaves stirfry is ready to serve!Tips:
Any variety of green leaves could be cooked in this way but amaranth leaves best suits this method of cooking.
Always wait for the mustard seeds to splutter or else it may add a bitter taste to the recipe.
Always maintain a low - medium flame while cooking this recipe and stir it occasionally to prevent the green leaves from getting burnt. ***
