Puttu, a Healthy and Tasty Breakfast.

Puttu is basically a rice cake with coconut log and it is one of the regular breakfast options for Keralites all over the world. Usually puttu is also availabe for breakfast in most of the restaurants in Kerala. In most of the houses puttu is made frequently.


Traditionally for puttu, only rice flour is used. In this recipe, for additional health benefits, I have used three extra items also.

Items required
Rice flour - 1 cup
Millet powder - 1/2 cup
Ragi powder - 2 tsp.
Moringa powder - 1/2 tsp.
Coconut scrappings - 1 cup
Salt - as required
Water - 1 cup

Preparation

Mix all the powders and salt together.

Add water little by little and mix the powder with the fingertips until it gets the texture of puttu powder. (coarse powder). If required sprinkle 1 tsp water and mix it again with the finger tips.

Now check for the salt. If you feel it is less add a bit more salt.

Keep the puttu vessel on the stove, with two glasses of water, and put on the stove, to get it heated. If you do not have a puttu vessel you can use a pressure cooker like Prestige or Butterfly, without the weight. (Hawkings cooker is not suitable for this purpose).

In the meanwhile, place the perforated disc inside the cylindrical vessel.

Then add 2 tablespoons of fresh coconut into it and spread evenly. Gently add 2 tbsp. of puttu flour on top of it, and then again add coconut layer. Add 2 tbsp. of puttu flour again on top of the coconut layer. Like this, you will get 3-4 pieces of puttu layers and coconut layers. Finally cover it with the cap which has holes.

Keep this cylindrical vessel on top of the the Puttu vessel or the pressure cooker.

Steam the puttu on medium flame till you see steam releasing through the cap holes. Keep it for another 2 to 3 minutes, for proper cooking.

Remove the cylindrical vessel from the stove keep it cool for 2 minutes.

Remove the puttu from the cylindrical portion gently with with a skewer or the thin stick accompanied it.

The hot puttu is ready to be served.

How to eat this -

Children would love this with 1 to 1 1/2 tsp.sugar with or without milk.

For others, Bengal gram curry or Kabuli chana curry will be an excellent combination.

Banana is another combination to enjoy puttu breakfast.
