Star Gooseberry - Arinellikka - Pickle

Star gooseberry (Arinellikka) Scientific name - Phyllanthus acidus has several health benefits. Very delicious pickle can be made from these berries.


ITEMS NEEDED -

2 cups star gooseberries
1/2 cup water.
3 tbsp. gingely oil
3 tsp. red chilly powder
1 tsp. turmeric powder
2 tsp. fenugreek powder
1/2 tsp. asafoetida
1 tbsp. chopped garlics
1 tbsp. chopped ginger
1 tsp. mustard
4 red chillies - cut into pieces
4 green chillies - chopped.
1 bunch curry leaves
Salt as required.

Method of Preparation -

a) Wash and clean the star gooseberries, and drain the water.
b) Keep the star gooseberries in a vessel, add salt and 1/2 cup water, and boil it for 15 minutes in medium flame.
c) Remove from stove and drain the water, preferably through a strainer.
d) Keep a pan on stove and add 1 tbsp. of gingely oil, and saute the gooseberries for about 5-7 minutes, then keep aside.
e) Keep another pan on stove, add the remaining 2 tbsp oil.
f) Add the mustard seeds. After they splutter add ginger, garlics, green chillies, red chillies, curry leaves etc.
g) When they mix well, add fenugreek powder, turmeric powder, chilly powder, and asafoetida. Mix well.
h) Add the star gooseberries and mix well for about 5 minutes.
Now your pickle is ready

If the pickle is for a short time use and you need a bit of liquid with the pickle, add the strained star gooseberry juice kept aside.
If it is kept for more than a week the pickle may get spoiled. So if you want to keep it for a while don't add this.
